Thank you 'yarnstorm' for the delicious Butterscotchy Lemon Curd Cake recipe. I have never made lemon curd before, but it was really quite simple and very, very nice!

I have tried many different recipies for egg-free almond macaroons, but these were by far the best yet. I combined a few recipies to make this one.
I can't quite remember the exact quantities (will have to just make them again to check!) but it was something like this...

Next time I make these, I will use rice paper and I will put an almond on top of each cookie before putting them into the oven.

My mum came to stay last weekend. We had a really busy weekend... we visited places, cooked, baked and sewed together.
As I couldn't be with mum today on her birthday I made these cakes for her on Sunday. I followed a Nigella Lawson recipe, but replaced the eggs with egg replacer.
I have always wanted a cake stand and mum bought this one for me from Liberty... I love it. I was able to put it to very good use!
Mum also bought some fabric while we were in Liberty - we decided that we would make some WeeWonderful 'Wees' on Sunday. Mum finished hers but I have yet to finish mine - it still needs a face! I will attempt to give her something to smile on this weekend and then post some photos of the finished pieces. Here is a sneeky peek at mum's 'Wee' though!
